
Another week, another menu. {SIGH} I'm actually getting back into the groove of cooking on a regular basis. It helps that the kids are getting a bit older and they entertain themselves for longer periods. Little One still has a cold, though, so she needs much more cuddle time than normal. Luckily, most of this week is simple meals:
Monday: Crockpot Chicken (whole chicken, pat with butter, season with garlic, seasoned salt, parsley - cook for 6-8 hours); twice-baked potatoes
Tuesday: Buffalo Chicken Sliders
Wednesday: Chicken Noodle Soup (made with leftover crockpot chicken), homemade rolls
Thursday: Cheeseburger and Rice Skillet
Friday: Pita Pizzas (We're having a big play date so this is lunch - dinner is up in the air)
Saturday: Pizza (instead of Friday this week)
Sunday: Potato Soup - I haven't figured out a recipe yet, but potatoes were on sale :)
What else I've been up to in the kitchen:
I mastered the Cake Boss's Pumpkin Pie recipe. If you're on pie-duty for Thanksgiving MAKE THIS! YUM!
I made my mother's apple crisp. It was delicious although when she came over yesterday and saw it on the stove she asked what it was. When I told her, she said, "Mine never looked like that..." And not in an encouraging kinda way. :( I thought it was fine.
Mom's Apple Crisp (I doctored it with some nutmeg):
5 cups chopped apples (peeled)
1/2 cup sugar
1 tsp cinnamon
crumb topping:
2 cups flour
½ cup brown sugar
½ cup brown sugar
½ tsp cinnamon
¾ cup margarine - cold
Place apples in bottom of 8x10 pan. Sprinkle with sugar and cinnamon mixture. Top with crumb topping made by combining remaining ingredients until crumbly. Bake @ 350°F for 50 minutes.

Whoopie Pies
1 egg

1/3 cup vegetable oil
1 cup sugar
1 cup sugar
2 cups flour
1/3 cup unsweetened cocoa
1/3 cup unsweetened cocoa
1 tsp baking soda
¼ tsp salt
¼ tsp salt
¾ cup milk
1 tsp vanilla
Heat oven to 350°F. In large bowl beat eggs and oil at medium speed. Gradually beat in sugar and continue beating until pale yellow. In another bowl, combine flour, cocoa, baking soda and salt. Ina measuring cup combine milk and vanilla. Add flour and milk mixtures alternately to eggs and sugar, beginning and ending with dry ingredients. Drop by tablespoons onto greased cookie sheets. (These spread A LOT – no more than 6 per sheet). Bake 5 minutes or until top springs back when lightly touched with finger. Remove to wire racks to cool. Use filling to make sandwiches.

1 cup Marshmallow Fluff (about ½ of 7 ½ oz jar)

WOW! The buffalo chicken sliders sound so good! I think it'll be too hot for my little one, but my older son and hubby will LOVE it! Thanks for the idea!
